This product is 100% made in France, imagined and manufactured in the workshops of Claude Dozorme, master craftsman and cutler.
The Haute Cuisine cutter has a very good balance between its blade and its handle, for a better grip and incomparable quality.
The design guard is made of solid stainless steel. Its blade, polished matt, goes to the end of the handle and it is designed in a very high quality steel: X50CrMoV15.
The sharpening, very precise, allows for easier re-sharpening. Rockwell hardness is between 54 and 56 HCR and the sharpening of the blade is razor.
This cleaver also exists with an acrylic handle, which is dishwasher safe.
